Man,  pizza is one tasty dish. But let’s be honest – it always tastes better when it’s homemade, right? We have a bit of a pizza tradition in our house. You could reasonably say that we have an obsession actually. At least once a week, we feast on homemade pizza pies and we’ve discovered that for good pizza in the summer, the BBQ is the way to go. Today, we’re sharing how to make grilled pizza with our super simple BBQ pizza recipe!

This is perfect for picky eaters because you can customize every single pizza’s toppings. We are at the stage where the kids only want cheese…so the mini pizza approach keeps it simple!

Questions about Grilling Pizzas

Naturally, there are questions about cooking something that is traditionally cooked in an oven, on a grill. The first question is – does the pizza dough stick to the grill??? And the answer is no, it doesn’t stick if you add enough oil to the dough first. You do have to increase the lubricant in the dough when you’re dealing with open heat. If you start with sticky dough, it will fall into the BBQ grill and that will be a serious mess. 

The other question is whether you can BBQ a frozen pizza. And I’m so excited to say the answer is YES. It’s a slightly different method than grilling your own homemade pizza, but you can definitely do it. 

Just remove the frozen pizza from all the packaging. Put it on a preheated grill set to about 425F-450F. Close the lid and let it cook for 8-10 minutes. It’ll be better than doing it in the oven. Guaranteed.

Easy grilled mini pizzas you can cook on the BBQ. Finished in about 20 minutes!

Ingredients

Pizza Sauce

  • 1/2 clove garlic, chopped
  • 1 can store bought tomatoes
  • salt, pepper, seasoning to taste

Grilled Pizza Dough

  • 1.5 cups lukewarm water
  • 1 packet quick rise yeast
  • 1 tsp sugar
  • 2 TB olive oil
  • 2 1/2 cups all purpose flour
  • 1 tsp kosher salt
  • sprigs rosemary to taste (optional)

Instructions

Toppings for these grilled pizzas can be whatever you want. Your first step should be to prep them and set them aside. Grate cheese. Chop peppers, onions, anything you want to dress your pizzas with. We mixed some shredded chicken with BBQ sauce. And a few of our pizzas had fresh basil on them too.

For the SAUCE: Just chop some garlic and then sauté for 2 minutes in olive oil. Add can of tomatoes (strain first to avoid watery sauce) and then crush up the tomatoes with a back of the spoon. Cook for 15-20 minutes over medium heat. Season with salt, pepper and your favourite herbs to taste. 

For the DOUGH:

  • In a measuring cup, measure the warm water. Slightly warmer than lukewarm is the best qualifier I can provide here.
  • Add yeast and sugar and give it a quick stir. Set aside for 5 minutes and allow the yeast to get to work.
  • Add a good 2 T of olive oil to the yeast mixture, stir, and then add the wet contents to the flour mixture. If you’re using the standing mixer, put on the dough hook and let it mix until it all comes together. If you’re using your wooden spoon instead, put some muscle into it and stir it up.
  • Knead the dough for a minute and then set aside somewhere warm for 5-10 minutes.
  • On a floured surface, roll out your dough. Then, either cut the whole thing into quarters (or use something round like a cookie cutter and cut out nice, round pieces). I’ve found smaller pizzas much easier to handle.

To GRILL THE PIZZAS:

  1. Liberally brush one side of the dough with olive oil and place dough oil-side down on the hot grill. Repeat and fit however many you’re comfortable cooking at once onto the grill. Know that the dough will bake quickly, especially if you’ve got a thin crust!
  2. While it’s grilling, brush the top side with more olive oil.
  3. After 2-3 minutes, use a spatula to check the bottom. It should have some nice charring. Flip the dough so the cooked side is up.
  4. Now, assemble the pizzas. Less is more. A couple spoons of sauce, cheese and whatever else you’ve prepared.
  5. Close the lid, lower heat and wait. It usually takes only 2-3 minutes per side to fully cook this pizza. If your cheese hasn’t melted in the time the lid was down, turn off the heat and reclose the lid. In a few minutes it should be ready. BEHOLD THE BEAUTY OF YOUR BOLD BBQ PIZZAS The best way to behold is to eat!
